grip is my first priority i do not want to stretch them... what tires should i use for 16x8 and for 16x7

i heard that i should use 245 for the 8" and 235 for the 7"
but i also heard that too wide is no good

question is:
what is the ideal tire size for my wheels for grip?

Reccomended rim widths for different tire sizes are available at any tire manufacturer's website in the specs for whatever tire you are interested in.

You don;t have much choice in 16" sizes.

225/50-16 F

245/45-16 R

Done, and done.
