8.5 isn't that narrow.
I ran 18x8.5 +35 w/ 235/40R18 in the front with about 10mm to the rolled fender. So you could run the same tire size with about 5mm clearance. Or even go up to a 245/40. Those would give you a meaty fitment.
If you want to go with the stretched camber look, go with the 205/40 (215 won't be enough). But you'll need 15-30mm spacers, since 18x8.5 +35 is not very aggressive and will look very sunken with those small, stretched tires and no spacers.
