I never was a fan of the probe type, pun intended dad jokes.
I use a controller from Summit, cant think of brand too lazy to google some generic fan controller..but your right it takes an additional sensor tapped into cooling system.
you can adjust it and see when fans come on and what your temp gauge says, then tweak it from there.
