NPT or Probe Type thermoswitch (fan controller)

My question is which would be the better of the two?

My current set up MISHIMOTO SR radiator with dual e-fans/shroud. ( FANS on a switch )

I have an after market temp. gauge (PBM EVDM) I was wondering if I were to get the probe style controller I can simply adjust the knob to kick the fans on when the desired temp shows up on my gauge. Correct?

Only reason is that I have the upper rad house with switch adapter already installed ( cut the upper hose in half and connected the temp adapter ) if i were to get the NPT controller unit i would have to tap threads to support NPT sensor (in assuming the upper water neck would be ideal)
