found some gram lights 57s for s13, but if i want a wider wheels, they don't come in good offsets like the 17x7.5's.

would ya get a 17x7.5 rears in +20 offset

or

get a 17x8.5 rears in +40 offset,

then add necessary sized spacers?

17x8.5 with a +40 offset will fit in the rear just fine, that is if you have coilovers. I have those rims with 235's and they fit with out rubbing.

Is this for looks (flushness) or fitment.

They fit find, and if its for flushness, they are only about 7.3 milimeters more sunken in than the +20's so get the wider wheel and then get spacers.
