Look into getting a complete standalone. Psi makes them where all you need is to supply switched 12v and hook up the fuel pump and your done. Completely self contained and seperated from the oem fuse box. Everything unnecessary is already deleted and can be customized for injector types, 3 or 5 pin maf etc. Mine was $500 shipped.

5.3 or 6.0 doesn't matter as far as wiring goes. What matters is the generation of the actual motor. Gen 3 catherdral head ls1, lm7, Lq4/9, ls6 all are 24x crank sensor motors and harnesses will be the same for these and are red/blue pcm plug motors. Gen 4 motors with rectangular heads will be ls3, ls7 and the truck variants that have 58x crank sensors drive by wire throttle bodies cam sensors in the front etc and they have small pcms. There are also hybrids like late gen 3's, ls2 and some ctsv ls6's (I think) that are drive by wire but have 24x crank sensors, diffrent injector clips and blue/green pcm plugs. Plus you can also put gen 4 heads on gen 3 blocks.......it gets confusing as hell.

Bottom line is displacement doesnt matter the block generation and sensor setup do. For simplicity stick with any 24x block with a cam sensor next to the oil pressure sensor at the back of the motor. Run a drive by cable throttle body and you can pic any displacement you want 5.3,5.7,6.0. The fbody harness will work.fine for this.
