What is the green shit you sometimes see on meat?

I know i'm not the only one who's seen this. I see it on roast beef, ham, fish, pretty much every meat i've eaten. It's only visible from a slight angle, but it's a reflective green/red sheen. what the hell??

i believe it's the marking ink, it won't kill you. it's used for meat inspections, and is approved by the FDA and USDA for use on food products.

It's natural, don't worry about it.

From the USDA

"Iridescent Color of Roast Beef
Sliced cooked beef or lunch meat can have an iridescent color. Meat contains iron, fat, and many other compounds. When light hits a slice of meat, it splits into colors like a rainbow. There are also various pigments in meat compounds which can give it an iridescent or greenish cast when exposed to heat and processing. Iridescent beef isn't spoiled necessarily. Spoiled cooked beef would probably also be slimy or sticky and have an off-odor."

I always thought it had something to do with iron in meat. Something related to iron oxidizing, kinda like rust.

Thats on the outside of the meat cut (or loaf, if its processed stuff), and its basically the same thing as a thick food coloring. no taste and completely harmless. The iridescent sheen is fats and other compounds that reside in the muscle tissue (meat) of animals. You see it a lot on unprocessed (ie, not pressed) ham and turkey. Wont kill you.
If its slimy and sour smelling (especially with turkey), throw that shit out. Also if you see a clear congealed gel.

Thanks, friend of mine who worked at the grocery store and gave me useless knowledge
